The traditional St. Louis-style pizza has its own distinct look, texture, and flavor that has become popular not only in the St. Louis region but throughout the world.
It's known for having an incredibly thin and unleavened crust. There are 3 cheeses used: white cheddar, Swiss, and provolone. Although mozzarella is an all time American favorite, it's rarely used on the traditional Saint Louis Style Pizza.

Did you know that Provel cheese (which is the mixture of white cheddar, Swiss, and provolone) was developed by the St. Louis firm known as Costa Grocery in the 1950s?
Currently it's mostly made in Wisconsin for the St. Louis area, and not widely available to outside areas around the country.
The St. Louis Pizza Crust
Some might describe the St. Louis pizza crust as being crunchy and cracker-like. Since it's made without yeast it doesn't rise like most doughs. Typically the pizza is cut into squares instead of the traditional triangles to avoid breakage at the tip. This is often known as "The Party Cut".

The most common chains you will see are Imo's Pizza, Cecil Whittaker's Pizza, and Elicia's Pizza. Each have there own variation of the traditional St. Louis pizza and how it should taste.
Serra's is another pizza parlor that serves what they call "The Original" St. Louis Style pizza and have been around for over 40 years. Both Serra's and Imo's claim to have pioneered "The Original" even though it predates both pizzerias.
